Att mat slängs i livsmedelskedjans alla steg är ett problem som under de senaste åren fått allt mer uppmärksamhet, då livsmedel som det inte är något fel på kastas eller blir till djurfoder. Att inte ta tillvara på det som produceras är kostsamt och onödigt slöseri med resurser. Syftet med denna studie var att ta reda på var svinn uppkommer i livsmedelskedjan och varför. Att kartlägga hela kedjan för alla olika livsmedel är ett stort projekt, därför genomfördes studien med fokus på den svenska brödindustrin. Vetenskapliga artiklar och litteratur studerades för att få en tydlig bild av hur livsmedelsindustrin ser ut. Därefter genomfördes en fallstudie på ett företag i Stockholm, där en person med lång erfarenhet inom livsmedelsbranschen och brödindustrin intervjuades. De delar av livsmedelskedjan som studerades var de som fanns inom företaget, vilka var kvarn, bageri och handel. Resultatet av studien visade att det i den studerade livsmedelskedjan, liksom många andra, uppkommer svinn i alla led men att den betydande delen finns inom handeln. Avtalet mellan återförsäljare och producenter samt slutkonsumenters beteende har en avgörande roll till varför svinn uppkommer.

Abstract [en]

The fact that food is wasted throughout the whole food supply chain is something that has gotten more and more attention during the last years, this is because edible food is being thrown away or used as petfood. To not take advantage of the things that are produced is an unnecessary cost and a great waste of resources. The aim of this study was to findout where in the supplychain the food waste occurs and why. To map the chain for all sorts of food is a huge project; therefore the study was conducted with focus on the Swedish bread industry. To get knowledge about the food industry, literature and scientific articles was used. Further, to collect more information, a case study was performed on a company in Stockholm, where a person who has experience in the food industry and the bread industry was interviewed. The stages of the food supply chain that are included in this study were the stages that was used within the selected company. These stages were mill, bakery and trading. The result for this study showed that waste occurs in all stages of the food supplychain, but that the major waste comes from the stage of trading. The industry design and the customer behavior have a decisive role in why wastage incurred.
